Southern Pole Bean

Wash the beans in a colander, under cold water. Let drain.
In a large heavy bottomed Dutch oven, add the hog jowl and butter, let render and cook until slightly browned, about 10-15 minutes.
Add the pole beans and toss to coat with the hog jowl fat and butter. Add the chicken broth, house seasoning, and onion. Cook over medium heat, covered for about 30-35 minutes, adding more chicken broth if needed, until the beans are tender.
